I'm guessing they used an aggregator (Tunecore, The Orchard, etc) to upload. You can't work directly with iTunes Music without meeting certain criteria and one of those is having a large catalog. Upload the tracks, input all the information, and tell it when to release and up on iTunes it goes. I'm pretty sure when you do upload it on there, though, that you are agreeing that you hold the copyright to the sound recordings being uploaded. (Youtube works much in the same way and obviously you can ignore it and run the risk of it getting pulled down and your account shut down.)

Plus, Polydor would not have been listed on the copyright to the recordings because 1. Stevie and Lindsey have the rights to their masters (according to them in interviews) and 2. Polydor doesn't exist as Polydor on its own in the US anymore. It would be listed as UMG/Interscope or Polydor a subsidiary/division of UMG or something like that.
