It was a remark he knew he should not have made, because he knows she doesn't buy it. from him. So it was a bit provoking. Especially because he put it mildly. It's part of their dynamic, I suppose, but he could have left it.
On the other hand, she obviously cannot handle that dynamic anymore, and I wish she'd say that. THAT would soften my interpretation of her behaviour towards recording with her band.

If it really is that she can't write anything else, or doesn't feel she can use her old demos as they aren't good enough, then that's just sad. Honestly I've always been on Stevie's side for this issue. I had a similar situation in middle school. We were doing a play and one of my fellow cast members was like "You don't say the lines like that. Its like this." I bit my tongue, but I so wanted to say "Excuse me, but are you the director? Shut up, I'll play the part how I want to play the part!"
